An aromatic rice, for special occasions, extremely fragrant and nourishing.
Preparation and cooking time: 1,5 hours
Ingredients:
1/2 cup wild rice
1 cup long grain brown rice
1 medium onion, finely chopped
3/4 cup diced celery
2 cups mushrooms
4 cloves finely chopped garlic
1/2 cup chopped peanuts
5 chopped dried apricots
1/2 cup raisins
1/2 cup freshly chopped parsley
1 tablespoon freshly chopped dill
3 tablespoons freshly chopped thyme (or 1 tablespoon dried thyme)
3/4 cup chicken soup
2 tablespoons olive oil
salt and black pepper to taste
Method of preparation:
- Boil brown rice and wild rice together in lightly salted water for 45 minutes.
- Drain the rice from the water, place in a bowl and set aside
- In a pan, over low heat, cook the onion in a tablespoon for 2 minutes, then add the mushrooms, peanuts and celery and continue to harden for another 5 minutes.
- Mix all the ingredients, season to taste with salt and pepper and bake for 45 minutes.
- Remove the dish from the oven, add the olive oil and gently stir in.
