You can enjoy this fragrant pate wrapped with your favourite vegetables and fruit, and for extra flavour add it to salads or your snacks as well.
Preparation and cooking time: 10 minutes
Ingredients:
- 4 medium carrots given on a grater
- 1 small pickled cucumber, chopped into pieces and well squeezed from the juice
- 1/4 pickled pepper, drained and diced
- 2 cups chopped cashews
- 4 tablespoons fresh, chopped ginger
- 3 tablespoons fresh lemon juice
- 4 tablespoons soy sauce
- 8 tablespoons olive oil
- 4 teaspoons chopped parsley
- salt and pepper to taste
Method of preparation:
- Mix all ingredients (except the pickled cucumber, the pickled pepper and parsley) in a blender until a uniform paste is formed.
- Add the parsley, the pickled cucumber, the pickled pepper and mix well with a spoon
