Ingredients:
- 1/2 cup vegetable soup
- cup of red and green pepper, Julienne sliced
- 1 cup onion cut into rings
- 1 cup of broccoli
- 1/4 cup cashews
- 3 tablespoons olive oil
- 1 tablespoon honey
- 2 teaspoons lemon juice
- XNUMX minced garlic cloves
- salt and pepper to taste
Method of preparation:
- Heat a tablespoon of oil in a pan over low heat.
- Add the Julienne sliced pepper to the pan, cook for 1 minute, then add the honey, a pinch of salt, mix well, cover with a lid and simmer for another 3 minutes.
- Add broccoli, the onion and the soup (meanwhile heated in another bowl) and leave on the fire for another 5 minutes.
- Remove the pan from the heat and transfer the contents to a bowl.
- Add the rest of the ingredients (for the dressing), cashews and mix well.
